Do High Fat Foods Really Cause Heartburn That Wreak Havoc?
Whether people with acid reflux should continue to avoid those greasy, creamy, high fat foods is being hotly debated around the globe. Some researchers say experience shows that many high fat food cause big problems for some people. Some researchers say it’s the volume of the meal, not the fat. Other still say it’s the density of calories that really does the harm.
Could possibly be all of the above? Or are there other, more subtle ways that fatty foods encourage heartburn in some people? Such as the fact that the higher the fat of the meal, the longer it tends to stay in the stomach before moving on to the small intestine? In recent article, an Italian researcher stated that observations suggest that fatty meals, compared to balanced meals, do not promote acid reflux as long as the calories load is the same. But a high fat meal is more likely to contain the mother load of calories simply because every gram of fat is worth 9 calories compared to a gram of carbohydrate and protein which are each worth 4 calories.
I’ve literally lightened hundreds of recipe over the past 15 years. I have modified the fat by using reduced fat ingredients, cutting out some of the fat that isn’t absolutely needed, or replacing a fatty ingredient with something much lower in fat and calories, and in every single case, there are always fewer calories after I cut the fat in half the fat and fewer calories.
If you want to go by the results of the recent study mentioned earlier, which concluded it was the volume and not as much the calories density of the meal that influenced acid reflux, and then what does that mean for fatty foods? I think of it this way. What types of foods do we tend to overeat? Do we overeat yogurt? Or steamed broccoli? Or grilled salmon? Last I checked, we tend to overeat foods like french fries, pizza, ribs, steak, chocolate chip cookies, or chocolate cake and all notorious high fat foods.
